Tuscan White Beans & Rice

Ingredients

  • 2 tsp olive oil
  • 3/4 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pkg spinach, frozen, thawed & drained
  • 1 can diced tomatoes, drained
  • 2 cups rice, cooked
  • 2 cups navy beans, drained & rinsed
  • 1-1/4 tsp Italian seasoning
  • 1/4 tsp black pepper
  • 1/2 cup Parmesan cheese, grated

Directions

  1. Heat oil in large skillet over medium-high heat until hot. Add onion and garlic. Cook 7-10 minutes or until onion is tender. Add spinach and tomatoes. Cook 3-4 minutes more or until simmering.

  2. Add rice, navy, beans, Italian seasoning, and pepper. Cook and stir 3-4 minutes more until thoroughly heated. Sprinkle with Parmesan cheese.
