Bean Dip with Veggies Chips

Serves 8 people

Ingredients

  • 15 oz cannellini beans
  • 2-3 T lemon juice
  • 2 T EVOO
  • 1 small garlic clove, chopped
  • 1 t fresh rosemary, finely chopped
  • 1/4 t red pepper flakes
  • salt and pepper
  • store-bought veggie chips

Directions

  1. Combine first 6 ingredients in food processor with 2 T water until smooth.

  2. Season with salt and pepper.

  3. Transfer to a bowl and garnish with extra pepper flakes and sprig of rosemary.

  4. Make ahead of serving so flavors can marry. Serve with veggie chips.
