No-Knead Sourdough Bread

Ingredients

  • 1 cup (5 oz.) whole wheat flour
  • 2 1/2 cups (11 oz.) white bread flour
  • 1 1/2 tsp. salt
  • 1 1/2 cups purified water
  • 1/4 cup starter

Directions

  1. Mix dry ingredients together. Mix water and starter. Combine the starter mix with the dry ingredients.

  2. Cover and let rest for 18 hours.

  3. Turn dough out onto floured surface. Flatten, fold over in thirds, and then in half. Cover and let rest for 15 minutes.

  4. Prepare cloth for rising by coating with wheat germ or cornmeal.

  5. Put dough into prepared cloth-lined bowl and cover. I usually bake the bread at 500° for 30 minutes with the lid on and then remove the lid and continue baking for 15 more minutes at 450°
