Ingredients
- 1 lb parsnips
- 1 Tbsp olive oil
- 1/4 tsp Kosher salt
- 1/8 tsp garlic powder
- black pepper to taste
Directions

Peel and trim parsnips. Slice crosswise (separate narrow end from thick end). Quarter thick end, halve narrow end.

Toss parsnips in a bowl with olive oil, salt, and garlic powder.

Spread on a baking sheet and bake at 400F for 15 min, then turn. Bake for another 10 minutes until golden brown.
