Tuna & Red Rice Scramble

Ingredients

  • 2 TBL olive oil
  • 1 red onion or shallot
  • 3 cloves garlic
  • 1-2 cups shredded red cabbage
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup frozen corn or diced green beans (or both)
  • 2 cups cooked red rice (or brown rice)
  • 2 cans tuna
  • 1-2 TBL lemon juice (to taste)
  • salt
  • pepper
  • paprika
  • grown cumin
  • dried thyme
  • dried basil

Directions

  1. Brown onions and garlic for about 5 minutes and add all veggies starting with cabbage. Add all spices and herbs (amount to taste).

  2. Cook for another 5 mins. Add tuna and stir fry for another few minutes until tuna is heated through. Mix in red rice and remove from heat.

  3. Mix in lemon juice to taste and additional olive oil if needed.
