Weeknight Cheesy Pasta Skillet

Ingredients

  • 3 c rotini pasta, uncooked
  • 1 1/2 lb boneless, skinless chicken breasts, cut into bite size pieces
  • 3 c frozen mixed vegetables thawed, drained
  • 1 c salsa
  • 2 1/2 c shredded cheddar cheese

Directions

  1. Cook pasta as directed on package. Meanwhile, cook and stir chicken in large nonstick skillet on medium high heat 5 minutes or until chicken is done.

  2. Add vegetables and salsa; cook on medium heat 3 minutes or until heated through.

  3. Drain pasta. Add to skillet with cheese; stir until cheese is melted.
