Rice and Black Bean Burgers(vegetarian)

Ingredients

  • 1 (15 oz) can black beans, rinsed and drain
  • 1 C cooked rice
  • 1 small onion, chopped
  • 1 egg lightly beaten
  • 6 tablespoons salsa
  • 1/4 C sour cream
  • lettuce leaves
  • cheese slices
  • hamburger buns

Directions

  1. mash beans with fork

  2. add rice, onion, egg and 2-3 TB of salsa, mix well

  3. drop by 1/2 Cupfuls into large nonstick skillet coated with nonstick cooking spray

  4. flatten to 1/2 inch thickness

  5. cook over medium heat for 4-5 mins on each side or until firm and browned

  6. put on cheese

  7. in small bowl mix sour cream and salsa to taste

  8. place lettuce, burger and sauce mixture on bun
