Ecuadorian Arroz Relleno

Serves 6 people

Ingredients

  • 2 c uncooked rice
  • 1 onion
  • 1 green/red pepper, diced
  • salt
  • comino (don't know what this is in English)
  • 3 hard-boiled eggs, sliced
  • 4-6 hot dogs, sliced
  • 1 c peas
  • 2 carrots, cooked and diced

Directions

  1. Cook rice, eggs, peas, and carrots.

  2. Boil hot dogs, then slice and fry with a little oil.

  3. Saute onion, adding pepper sauce half way through.

  4. Combine all ingredients except eggs in a large baking pan. Place egg slices on top of rice mixture and cook for 30 minutes.
