Gluten-free Coconut Pecan Macaroons

Ingredients

  • 4 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup coconut
  • 1/2 cup finely chopped unsalted pecans

Directions

  1. Preheat oven to 300
  2. Beat egg whites, cream of tartar and salt until soft peaks form

  3. Add sugar 1 tablespoon at a time until stiff peaks form

  4. Fold in coconut and pecans

  5. Drop by tablespoonfuls on parchament lined baking sheet

  6. Bake until slightly brown and hard about 25-30 minutes

  7. Cool on a wire rack
