Shrimp Creole

Ingredients

  • 14 oz canned diced tomatoes
  • 1 tbsp Ketchup
  • 1 tsp chili powder (more if you'd like some kick to it)
  • 2 tsp brown sugar
  • pinch of salt
  • 1/8 tsp cayenne
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 1/3 cup celery, sliced
  • 1/2 cup onion, sliced
  • cooking oil
  • 1 lb cooked peeled shrimp
  • Rice

Directions

  1. Mix tomatoes, ketchup, seasonings and set aside

  2. Heat oil in 12-inch skillet

  3. Stir fry peppers, celery & onions 3 minutes.

  4. Add tomato mixture

  5. Add shrimp and heat through

  6. Let simmer a couple of minutes. (Do not overcook shrimp!)

  7. Serve over rice
