Pate Brisee

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup cold unsalted butter, cut into small pieces
  • 1/4 cup ice water

Directions

  1. Combine flour, salt and sugar in food processor

  2. Process for a few seconds to mix

  3. Add butter.

  4. Process until mixture resembles coarse meal about 6-10 seconds.

  5. Add ice water in a slow steady stream through feeder tube until dough just holds together.

  6. Turn onto a piece of plastic wrap

  7. Press into a flat circle and wrap in plastic.

  8. Refrigerate for at least 1 hour.

  9. May be frozen, double wrapped in plastic for several months
