Pinwheel Cookies

Ingredients

  • 1 cup sugar
  • 2 1/4 cup chopped pitted dates
  • 1 cup water
  • 1 cup chopped nuts
  • For dough:
  • 1 cup shortening
  • 2 cups brown sugar
  • 3 eggs
  • 4 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Directions

  1. Prepare the filling. Cook the first 4 ingredients on high until the mixture boils. Turn to low and continue to cook for 5 minutes

  2. Prepare the dough.

  3. Cream the shortening and brown sugar

  4. Add the eggs and beat well.

  5. Add sifted dry ingredients.

  6. Divide dough into equal parts and roll out to 1/4" thick.

  7. Spread each piece with filling

  8. Roll and chill in refrigerator overnight

  9. The next day, cut into 3/8" pieces and bake on greased cookie sheet until brown.
