Tiramisu

Ingredients

  • 1 1/2 cups Marsala wine or brandy
  • 1 1/2 cups sugar
  • 12 egg yolks
  • 2 teaspoons instant coffee
  • 1 pound mascarpone cheese
  • 1 1/2 packages lady fingers
  • 2 tablespoons unsweetened cocoa powder or shaved chocolate

Directions

  1. Whisk 3/4 cups wine, 3/4 cups sugar and yolks in a large metal bowl.

  2. Set bowl over saucepan of simmering water and beat using portable mixer until candy thermometer registers 160 or about 15 minutes.

  3. Remove bowl and set aside

  4. Combine hot water and espresso in large bowl and stir to dissolve.

  5. Add cheese and remaining sugar and beat to blend.

  6. Line bottom of 9 × 13 pan with lady fingers, flat side up.

  7. Brush with wine and spread with 2 cups of cheese mixture and 2 1/2 cups zabaglione.

  8. Arrange another layer of lady fingers and repeat

  9. Cover with remaining zabaglione mixture.

  10. Sift cocoa on top, cover and chill for 6 hours

  11. Cut into squares and serve.
