Food Processor Yellow Cake

Ingredients

  • 2 cups cake flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 3/4 cups sugar
  • 4 large eggs
  • 1 1/2 sticks unsalted butter, cut into 8 pieces, room temperature
  • 1 cup minus one tablespoon buttermilk
  • 1 tablespoon vanilla

Directions

  1. Preheat oven to 375
  2. Adjust oven rack to middle position

  3. Insert the metal blade in food processor.

  4. Place flour, baking powder, salt and soda in bowl and process for 2 seconds

  5. Reserve mixture

  6. Process sugar and eggs for 1 minute or until mixture is thick and light colored

  7. Add butter and process for 1 minute or until it is fluffy, stopping the machine once to scrape down the bowl

  8. With machine running, pour buttermilk and vanilla through feed tube

  9. Remove cover and add reserved flour mixture

  10. Blend the batter by turning the machine on and off for 4 to 6 times or until flow just disappears

  11. Do not over process

  12. Divide batter among 3 buttered and floured 6" cake pans or a 12 cup bundt pan

  13. Bake for 30 minutes or until brown and toothpick comes out clean

  14. Let the cake rest for 5 minutes and invert onto rack to cool

  15. For a lemon flavored cake, process zest of 1 lemon and 1/4 cup sugar until zest is as fine as the sugar and then proceed with the recipe
