Triple Chocolate Anniversary Cake

Ingredients

  • 6 ounces unsweetened chocolate, chopped
  • 1/4 cup oil
  • 2 teaspoons vanilla
  • 2 1/2 cups cake flour, unsifted
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder and salt
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 1/2 cups buttermilk
  • WHITE CHOCOLATE FILLING
  • 3 1/2 ounces white chocolate, chopped
  • 3 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 teaspoon vanilla
  • 2 1/4 cups powdered sugar
  • DOUBLE CHOCOLATE FROSTING
  • 1/2 cup unsalted butter
  • 3 ounces unsweetened chocolate, melted and cooled
  • 1/3 cup unsweetened cocoa powder
  • 2 teaspoons vanilla
  • 1/2 cup sour cream

Directions

  1. Preheat oven to 350
  2. Coat 3 9" pans and line with waxed paper

  3. Coat paper

  4. Flour pans

  5. In glass bowl, combine chocolate and oil and microwave on high for 1 1/2 minutes, until melted

  6. Add extract

  7. Let cool to room temperature

  8. In clean bowl, whisk flour, baking soda, baking powder and salt

  9. In large bowl with mixer, beat butter and sugar on medium for 2 minutes or until mixture resembles wet, crumbly sand

  10. Beat in the eggs 1 at a time, then cooled chocolate mixture

  11. With mixture on low, beat in flour mixture in batches, alternating with buttermilk, beginning and ending with flour mixture.

  12. Mix until smooth.

  13. Scrape into prepared pans and bake for 24-26 minutes or until toothpick comes out clean

  14. Let cool in pans on rack for 15 minutes, then turn onto rack.

  15. Remove paper and cool completely

  16. For filling, microwave white chocolate on high 1 minute, until soft

  17. Stir until melted and cool to room temperature

  18. In medium bowl, beat cream cheese and add cooled chocolate

  19. Beat on low just until combined.

  20. Add vanilla and powdered sugar

  21. Beat on low until sugar is incorporated, then increase speed to medium and beat for 1 minute, until fluffy

  22. Cover and keep at room temperature

  23. For frosting

  24. In large bowl, beat butter, melted chocolate, cocoa mixture and extract on medium until creamy.

  25. Gradually add sugar, alternating with sour cream until well blended

  26. Beat for 1 minute until fluffy

  27. Assemble cake with filling between the first 2 layers.

  28. Frost the top and sides of the cake with frosting
