Tossed Herb Salad

Ingredients

  • 1 head romaine lettuce, small
  • 1/2 lb fresh spinach
  • 1/3 cup fresh salad oil
  • 2 Tablespoons cider vinegar
  • 1-1/2 Tablespoon parsley, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 teaspoon dill weed, dried
  • 1/4 teaspoon thyme, dried
  • 1/4 teaspoon tarragon leaves, dried
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Wash lettuce and spinach, dry thoroughly.

  2. Keep in crisper in refrigerator until ready for use.

  3. In a jar with a tight fitting lid, combine oil with remaining ingredients except cheese.

  4. Shake to mix well.

  5. Refrigerate at least 1 hour.

  6. Tear lettuce and spinach leaves into bite-sized pieces, turn into large salad bowl.

  7. Lightly toss salad dressings with greens.
