From the Lake Holm Ward Cookbook; goes with “Orange Chicken”

- 2 c minute rice
- 2 T butter or margarine
- 1/4 t salt
- 1/4 c dry-roasted almonds (or 1/4 c raw almonds browned in butter)
- 1/4 c dry currants or raisins
Prepare rice according to directions adding butter and salt.
Just before serving, stir in almonds and currants.
