mashed potatoes (wisconsin romano and roasted garlic)

Serves 10 people

Ingredients

  • 10 medium baking potatoes, peeled
  • 1 gallon water
  • 15 cloves garlic
  • 1/2 cup olive oil
  • 1 cup milk
  • 1/2 cup butter
  • 1/2 cup romano cheese, grated
  • salt and pepper, to taste

Directions

  1. place olive oil and garlic in small pan and simmer slowly intol garlic is browned

  2. puree garlic and oil and reserve

  3. cut potatoes into medium-sized chunks

  4. place in cold water and bring to boil. cook until potatoes are jsut tender

  5. strain off all water and return potatoes to pot.

  6. add all ingredients including olive oil/ garlic puree and hand mash until smooth

  7. garnish with grated romano cheese and chopped parsley
