My Best Meatloaf

(from NightfallPA’s recipe box)

Ingredients

  • 2 celery stalks, minced
  • 1/4 of a red onion, minced
  • 2 small to medium carrots, minced
  • 1 T olive oil
  • 1 1/4 pounds ground beef, 85%
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 T Parm cheese
  • 2 heaping tablespoons tomato sauce
  • Salt and pepper

Directions

  1. In a skillet, cook celery, red onion and carrots in olive oil until soft. Let cool.

  2. Combine vegetables with remaining ingredients and form into a loaf.

  3. Bake at 350 for 50 minutes.
