Sweet Potato biscuits

Ingredients

  • 1 3/4 cups flour
  • 2 tablespoons light brown sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teapoon baking soda
  • 6 tablespoons unsalted butter
  • 3/4 cup chilled sweet potato puree
  • 1/3 cup buttermilk

Directions

  1. Whisk together dry ingredients and cut in butter into a coarse meal.

  2. In a small whisk together sweet potato and buttermilk.

  3. Quickly stir into dry mixture and do not over mix.

  4. Bake at 425 placed snugly together on a baking sheet for 20-24 minutes.
