Hollandaise Sauce

Serves 2 people

Ingredients

  • 200g unsalted butter
  • 1/4 cup white-wine vinegar or verjuice
  • pinch of coarsely ground white pepper
  • 2 tablespoons water
  • 3 egg yolks
  • juice of 1/2 lemon

Directions

  1. Melt butter gently and allow to cool a little

  2. Put vinegar, pepper and water into a small saucepan and reduce over heat to 1 tablespoon liquid

  3. Transfer to small bowl that fits comfortably over a stable small saucepan half-filled with hot water

  4. Add egg yolks and whisk over a moderate heat until thick and foamy

  5. Whisk in butter a little at a time, still over heat

  6. When all butter has been incorporated you should have a bowl of thick, creamy sauce.

  7. Add lemon juice to taste
