Oatmeal Snack Bar

Cook time: 40 minutes
Serves 9 people

Ingredients

  • 1.5 cups rolled oats
  • 1/2 cup chopped walnuts (may substitute with almonds)
  • 3/4 cup dried fruit (1/4 cup cranberry, 1/4 cup raisins, 1/4 cup chapped chopped dried banana...could also use coconut, other dried fruit or nuts)
  • 1 tsp cinnamon
  • 1 tsp kosher salt
  • 1.25 cups skim milk
  • 1 egg
  • 1 tsp vanilla

Directions

  1. Preheat oven to 350 degrees

  2. Mix dry ingredients in large bowl.

  3. Mix wet ingredients in small bowl.

  4. Pour wet into dry and stir.

  5. Pour into 9×9 baking dish either coated in cooking spray or lined with parchment (last is best method).

  6. Bake for 40 minutes.

  7. Cut into 9 squares.
