Creamed Carrots

Ingredients

  • 2 # baby carrots
  • 2 t ground cinnamon
  • 2 T butter
  • 1 t salt
  • 1 t cinnamon
  • 1/2 t nutmeg
  • pinch of pepper
  • 2 t lemon juice
  • 1 cup heavy whipping cream

Directions

  1. Place carrots in saucepan with enough water to cover. Add 2 t cinnamon & bring to a boil. Reduce heat to med-high and cook 6-8 minutes or until fork tender. Drain. Return carrots to pan. Add butter, salt, 1 t of cinnamon, nutmeg, & pepper. Mix well. Add lemon juice and cream. Bring to a boil for 1 minute or until cream is slightly thickened. Adjust seasonings to taste.
