Braised Pork

Ingredients

  • 3 lb boneless pork butt
  • 2 T oil
  • 2 cloves garlic, minced
  • 2 large onions, chopped
  • 1 1/4 c water
  • 3 T tomato paste
  • 1/2 c whipping cream
  • 5-6 t chili powder
  • 1 t cumin
  • 1 1/2 t oregano leaves
  • 1 1/2 t salt

Directions

  1. Cut meat into “ cubes. Lightly brown in oil, a few pieces at a time. Push to side and add onion, garlic and spices.

  2. Cook till onion is limp.

  3. Stir in water, sugar, salt and tomato paste.

  4. Simmer until pork is fork tender (about 1 hr)

  5. Skim off fat.

  6. Stir in cream and cook until mixture boils.

  7. Garnish with pumpkin seeds.

  8. Fill warm tortillas with meat and garnish with avocados, tomatoes, sour cream.

  9. Lime can be squeezed over serving.
