Thai turkey curry

Ingredients

  • 11/2 tbsp vegetable oil
  • 1 sweet potato, thinly sliced
  • 1 onion, thinly sliced
  • 1 small red pepper, thinly sliced
  • 1 small yellow pepper, thinly sliced
  • 4 tbsp Thai green curry paste
  • 350g shredded and cooked turkey meat or chicken
  • 1 tbsp pesto
  • 400ml can coconut milk
  • 4 kaffir lime leaves, shredded
  • 1 tbsp fish sauce
  • 100g mangetout, sliced on the diagonal
  • handful of chopped fresh coriander
  • cooked jasmine rice, to serve

Directions

  1. Heat the oil in a large frying pan over a medium heat. Add sweet potato and cook over a medium heat for 5-6 minutes. Add onion and peppers and cook for a further 5 minutes until onion has softened. Add the curry paste and cook for a further 1 minute. Add turkey, pesto, coconut milk and lime leaves and simmer for 5-7 minutes, until the sweet potato is tender. Add the fish sauce and mangetout. Cook for 1 minute. Stir in coriander. Serve with jasmine rice.
