Thai turkey curry

Ingredients
- 11/2 tbsp vegetable oil
- 1 sweet potato, thinly sliced
- 1 onion, thinly sliced
- 1 small red pepper, thinly sliced
- 1 small yellow pepper, thinly sliced
- 4 tbsp Thai green curry paste
- 350g shredded and cooked turkey meat or chicken
- 1 tbsp pesto
- 400ml can coconut milk
- 4 kaffir lime leaves, shredded
- 1 tbsp fish sauce
- 100g mangetout, sliced on the diagonal
- handful of chopped fresh coriander
- cooked jasmine rice, to serve

Heat the oil in a large frying pan over a medium heat. Add sweet potato and cook over a medium heat for 5-6 minutes. Add onion and peppers and cook for a further 5 minutes until onion has softened. Add the curry paste and cook for a further 1 minute. Add turkey, pesto, coconut milk and lime leaves and simmer for 5-7 minutes, until the sweet potato is tender. Add the fish sauce and mangetout. Cook for 1 minute. Stir in coriander. Serve with jasmine rice.
