Chewy Gingersnaps

These gingersnaps are no fat, low calorie, and still pretty tasty.

Ingredients

  • 1 cup sugar
  • 1/4 cup applesauce
  • 1/3 cup molasses
  • 3 egg whites
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 2 1/2 teaspoons cinnamon
  • 1 teaspoon ginger, powdered
  • 3 tablespoons fresh ginger, grated finely
  • 1/2 teaspoon black pepper, ground
  • 1/4 teaspoon salt

Directions

  1. Beat the sugar, apple sauce, and molasses together.

  2. Add the egg whites, beating well after each.

  3. Beat in slowly the flour, baking soda, cinnamon, gingers, pepper, and salt.

  4. Chill dough for at least one hour. Form cookies, roll in sugar, and bake on greased cookie sheets until barely set.
