Shepherd’s Pie

Ingredients

  • 5 large potatoes, peeled and cubed
  • 1/2 c milk
  • 4 T butter
  • 2 lb lean ground beef
  • 1 medium onion
  • 2 cloves garlic, chopped
  • 2 T butter
  • 1/2 c flour
  • 4 T ketchup
  • 2 c beef broth
  • 8 oz shredded cheddar cheese

Directions

  1. Place the potatoes in a pot with enough water to cover. Bring to a boil and cook until tender. Drain and mash with desired amounts of milk and butter.

  2. Crumble the ground beef into a large skillet over medium heat. Add onion and garlic. Cook and stir until meat is no longer pink.

  3. eheat oven to 400.

  4. Melt the butter in a small pain. Stir in flour. Cook and stir over medium heat until dark brown, about 10 min.

  5. Stir in broth and ketchup until smooth. Heat on medium until thick.

  6. Stir the sauce into the ground beef and transfer to a casserole dish.

  7. Top with mashed potatoes, then sprinkle the cheese over the potato.

  8. Bake for 15-20 minutes in the preheated oven, until potatoes are toasted and cheese is melted.

  9. Alternative: add mixed vegetables
