Vegetarian Italian Meatballs

Haven’t tried these yet, but they sound good
Prep time: 15 minutes
Cook time: 30 minutes
- 4 eggs, beaten
- 1 C. Parmesan, grated
- 1/2 C. cottage cheese
- 1 C. pecans, finely chopped
- 1 t. Italian seasoning
- 1 t. salt
- 2 C. Italian seasoned bread crumbs
Preheat oven to 350°. Spray 9X13 baking dish with cooking spray or lightly oil.
Mix all ingredients together. (This can be done in a food processor.)
Spray your hands with cooking spray or use a little oil; roll mixture into 1-1/2” balls and place in baking dish. Bake for 25-30 minutes.
Gently simmer in spaghetti sauce for a few minutes and serve with your favorite pasta.
