Appi Payasa

Ingredients

  • 1 litre Milk
  • 1 Cup Sugar
  • Few strands of Saffron
  • 2 Cups Rava/Sooji/Semolina
  • 2tbsp Ghee/Clarified Butter
  • Oil for deep-frying

Directions

  1. Mix Rawa and Ghee, add little water and knead into a tough dough. Divide the dough into Lemon sized balls. On a floured surface roll each ball into thin discs. Make some incisions into them using a knife. This is done to avoid fluffing of Puri/bread while deep-frying. Heat Oil in a pan and deep fry the Puris one by one until they turn a golden brown. Remove on a kitchen towel.

  2. In another thick-bottomed pan mix Milk and Sugar and boil until the Milk becomes slightly thick. Add Saffron to the Milk.

  3. Just before serving crush the Puris into the Milk, mix well and serve immediately
