Gabe’s Philly Cheese Steak/Au Jus Sandwiches

  1. Use half of full size beef roast (probably two or three pounds), cut off fat and slice into semi-thin bite sized pieces. slice 1 1/2 small onions into half moon slices, cut onion in half end to end and slice again, wash and slice half a package of mushrooms (about 8-9), heat au jus (buy dry package) in small sauce pan. for the fries use potato cutter and cut each fry in half again. use 5-6 potatoes. heat oil (about half a pan full of pil maybe a little more) in pan on med heat when hot put frys in oil to cook, turn periodically, take out once golden brown, crispy but not burnt. sprinkle with salt serve with ketchup. To make the sandwiches use full size white rolls, (store made is best) slice in half and toast if desired. To make meat, put raw sliced beef in pan with onion and mushrooms start cooking (add a couple tablesppons of oil to pan) once the au jus in the sauce pan has heated up, add spoon fulls to the meat mixture and cook/simmer. For the girls cook only au jus, onions and meat (w/o mushrooms) in a separate pan. Once the meat has been cooked and mushrooms and onions are tender/cooked and a little juice remains but not sopping. Grate 1/2 small bar small sharp cheddar cheese and sprinkle on top off meat mixture while it’s in the pan til melted. stir with tongs gently. Once buns are ready (if desired to have toasted) scoop meat mixture from pan using tongs onto the buns. Cut in half and serve with fries and au jus on side if desired.
