GOURMET ICE CREAM SANDWICHES

Ingredients

  • 2 (6 oz.) pkgs. Lady Walton's Creamy Dark Chocolate Gourmet Cookies
  • 1 pt. Sonny's Butter Toffee Ice Cream
  • 1 cup coarsely chopped Kowalski's Chocolate Toffee Almonds

Directions

  1. Arrange cookies on counter; firmly pack ice cream into 1/3 cup measuring cup. Spoon ice cream onto center of 1 cookie; place second cookie on top of ice cream, gently pressing down until ice cream reaches edge of cookies. Roll edge of ice cream sandwich over chopped almonds; wrap in saran wrap. Freeze until ice cream is firm (2-3 hrs.). Repeat to make 6 ice cream sandwiches. To Serve: Let stand at room temperature to soften slightly (about 5 min.).
