Beef and Blue Cheese Penne with pesto

Ingredients

  • 2 cups whole wheat penne pasta
  • 2 beef tenderloin steaks
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 cups baby spinach
  • 2 cups grape tomatoes
  • 5 tbsp prepared pesto
  • 1/4 cup chopped walnuts
  • 1/4 cup gorgonzola

Directions

  1. Cook pasta.

  2. Sprinkle steaks with salt and pepper. Grill steaks, covered over medium heat or broil 4 in from heat for 5-7 minutes on each side or until meat reaches desired doneness

  3. Drain pasta and transfer to a large bowl. Add the spinach, tomatoes, pesto and walnuts; toss to coat. Thinly slice steak. Divide pasta mixture among four serving plates. Top with beef; sprinkle with cheese.
