Chicken, Celery and Avocado Sandwich

Chicken, celery and avocado sandwich makes a healthy kids lunch boxes ideas. A healthy kid’s sandwich should be constructed with vegetables, protein, good fat, low-GI and high-fiber carbohydrate.

Avocado is undeniably the best option to moisten your kid’s sandwich instead of butter and margarines which is high in saturated fat and trans fats. Avocado contains good monounsaturated fat and is an excellent source of B vitamins and vitamin E that help to reduce premature aging as well as lower high blood pressure.

For healthy sandwich ideas, try to use a high-fiber and low-GI bread such as wholemeal pitta bread, wholegrain, mountain bread or wholemeal lavash. Shredded cooked chicken is a great protein source for your child’s optimal growth.

Ingredients

  • 1/3 cup (50g) finely shredded cooked chicken
  • 1 stalk celery (150g), trimmed, chopped finely
  • 1/4 small avocado (50g)
  • 1 teaspoon lemon juice
  • 2 slices white sandwich bread (90g)

Directions

  1. Combine chicken, celery, avocado and juice in small bowl.

  2. Sandwich chicken mixture between bread slices; cut as desired. Wrap in baking paper or plastic wrap.

  3. Pack sandwich in lunchbox with a freezer brick or frozen drink.
