Pumpkin Delight

Ingredients

  • 1 box yellow cake mix
  • 1/2 cup margarine
  • 1 16-oz. can pumpkin
  • 1/2 cup brown sugar
  • 3/4 t. salt
  • 1 1/2 t. cinnamon
  • 4 eggs
  • 1/4 t. cloves
  • 1/4 t. nutmeg
  • 1 12-oz. can evaporated milk
  • 1/2 cup sugar
  • 1/4 cup margarine, softened
  • whipped topping or ice cream

Directions

  1. Heat oven to 350 degrees. Grease 9×13 pan and dust with flour.

  2. Measure 1 cup cake mix for topping and set aside. In a bowl, combine remaining cake mix, 1/2 cup melted margarine, and 1 beaten egg; stir until well blended. Spread mixture evenly in pan.

  3. In same bowl, beat 3 eggs; add pumpkin, brown sugar, salt, spices and evaporated milk. Pour mixture evenly over first layer.

  4. To prepare topping, place reserved cake mix i bowl with sugar. Using pastry blender or two knives, cut in softened margarine until mixture is crumbly. Sprinkle mixture over filling in pan.

  5. Bake for 55 minutes. Serve with choice of topping.
