Spinach Artichoke & Tortellini Salad

Ingredients

  • 20 oz cheese tortellini
  • 2 tbsp oliv eoil
  • salt
  • 8 oz baby spinach
  • 1/4 minced red onion
  • 14 oz marinated artichoke hearts
  • 2 minced garlic cloves
  • 2 tbsp red wine vinegar
  • 1 zested lemon
  • 1/4c olive oil
  • 1 tbsp fresh thyme
  • pepper
  • 1/2c sundried tomato
  • 1/4c goat cheese or feta (crumbled)

Directions

  1. Cook the tortellini 5 min in salted water.

  2. Drain, cool on cookie sheet and refrigerate until needed.

  3. In a large bowl, toss spinach, onion, artichokes.

  4. Mince the garlic and mash into a paste. Add to bowl with vinegar through thyme & pepper. Whisk.

  5. Mix with remaining, toss.

  6. Refrigerate and serve.
