Quick Turkey Chili

Ingredients

  • 2 Tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/4 pounds ground turkey
  • 2 Tbsp chili powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground cumin
  • 1 can black beans, drained
  • 1 can pinto beans, drained
  • 1 can diced tomatoes
  • 1-2 cups chicken broth
  • 1 cup corn kernels
  • salt to taste
  • sour cream
  • shredded cheddar cheese

Directions

  1. Heat vegetable oil in large pot over med heat.

  2. Add the onion and garlic and saute occasionally for about 3 min until onion softens.

  3. Increase heat to med-high, add ground turkey and stir, breaking up large pieces with the back of a wooden spoon.

  4. Add the chili powder, black pepper, and cumin; stir and continue to break up the meat to incorporate the spices.

  5. Allow mixture to cook for 5 more min, stirring occasionally.

  6. Add the black beans, pinto beans, tomatoes, 1 cup chicken broth, and corn.

  7. Taste and add salt if needed.

  8. Continue to cook for 5-10 more min, stirring occasionally.

  9. Add more broth if the chili is too thick.
