Beef kebabs with peanut sauce

Ingredients

  • 1/2 c light soy sauce
  • 2 T granulated brown sugar substitute (try www.low-carb.com)
  • 2 T sugar substitute
  • 4 cloves pressed garlic
  • 1.5 lb steak (sirloin) cut in pieces
  • 1/2 c creamy natural peanut butter
  • 3/4 c water
  • 3 T lime juice
  • 1 T chopped ginger
  • 1/4 t red pepper, ground
  • 1 green bell pepper, cut up
  • 1 red bell pepper, cut up
  • 1 onion, wedged

Directions

  1. In dish, combine soy, 1 T brown sugar, 1 T sugar substitute, 2 pressed garlic cloves. Add steak to coat, stirring once, let stand 20 min.

  2. In saucepan, high heat, combine peanut butter, water, lime juice, ginger, red pepper, rest of soy sauce, rest of sugars, and rest of garlic. Boil, sitrring constantly and set aside.

  3. Coat grill and preheat to high.

  4. Thread steak and veggies on 4 metal skewers and grill until done.

  5. Serve with sauce.
