Granola & Applesauce Morning Muffins

Ingredients

  • 11/2 cups granola (choose your favorite)
  • 1 cup all purpose unbleached flour
  • 2/3 cup whole wheat flour
  • 2 TB organic golden flax seed (ground if desired)
  • 2 tsp non-aluminum baking powder
  • 1 tsp baking soda
  • 11/2 cups organic applesauce
  • 1/2 cup milk or substitute
  • 1/4 cup brown sugar
  • 5 TB canola or other vegetable oil
  • 2 eggs
  • granola or rolled oats for topping

Directions

  1. Preheat oven to 400°F. Combine granola, flours, flax seed, baking powder and baking soda in a large bowl. In another bowl, whisk together applesauce, milk, sugar, oil and eggs. Add to dry ingredients and mix just until combined. Divide evenly into muffin tins (use either a non-stick pan or muffin papers) and fill 3/4 full. Sprinkle extra granola or rolled oats on top and bake 18–20 minutes or until tester inserted in center comes out clean. Let cool slightly and remove to a cooling rack.
