Beef with yellow peppers and black bean sauce

Ingredients
- 1/2 tbsp olive oil
- 1 tbsp black bean sauce
- 100g onion, roughly chopped into squares
- 400g rump or fillet steak, sliced
- 1 red chilli, deseeded and cut into long strips
- 300g yellow peppers, deseeded and cut into squares
- 200ml hot beef stock
- 1 tsp cornflour mixed with 1 tbsp water
Directions

Heat the oil in a non-stick sauté pan over a high heat until hot. Add the black bean sauce and stir-fry for a few seconds, then add the onion and sliced beef and stir-fry for about 1 minute, until the beef is half-cooked. Mix in the chilli and yellow peppers and stir-fry for 1-2 minutes. Add the stock and bring to the boil. Slowly stir in the cornflour paste until the sauce has thickened and becomes transparent. Serve immediately.
