LouLou’s Amazing Breakfast Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar (depending on your taste)
  • 1 cup non-dairy milk (I use almond)
  • 1 egg-replacer (I use Redmill)
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla essence

Directions

  1. In a large bowl combine the dry ingredients.

  2. In a smaller bowl combine the wet ingredients.

  3. Add the wet ingredients to the dry ingredients.

  4. Mix well into a smooth batter.

  5. Preheat a small pancake pan ( I spray a little canola oil on too).

  6. Use a soup ladle to drop batter onto pan.

  7. When the surface of batter begins to bubble, FLIP!

  8. Cook the other side for another 30 seconds or so and serve HOT!
