Amazing Steel Cut Oats

Ingredients

  • 1 1/2 cups steel cut oats
  • 4 cups very hot or boiling water
  • 1 cup dried fruit (raisins, chopped apricots, etc.)
  • 2 cups fresh or frozen fruit ( cut into bite-size pieces if needed, cherries and blueberries are my favorite combo).
  • 1/2 tablespoon peanut butter (mix into individual serving before eating).
  • 1 pinch salt to taste ( mix into individual serving before eating).

Directions

  1. Add steel cut oats, hot water and dried fruit to a covered 3-5 qt. dutch oven.

  2. Let sit at room temp. for 6-8 hours.

  3. Heat oven to 400, add fresh or frozen fruit to oats, mix everything together, and bake covered for 35 minutes.

  4. This makes 6-8 servings. Store it in the fridge in the dutch oven, and reheat single servings. After reheating, add the 1/2 tablespoon of peanut butter, and salt to taste.
