Jaimies get ahead gravy

pre made gravy for chicken or Turkey. Freeze and take out when putting Turkey or Chicken in oven.

Ingredients

  • 2 celery sticks
  • 2 carrots
  • 2 onions
  • 5 fresh bay leaves
  • 4 sprigs fresh rosemary
  • 2 rashers streaky bacon
  • 8 chicken wings
  • olive oil
  • sea salt and black pepper
  • 4 tbs plain flour
  • 60ml sherry or port
  • optional 2 dessert spoons cranberry sauce

Directions

  1. pre heat oven 200 deg

  2. put veg herbs and bacon in roasting dish

  3. break open chicken wings and bash bones with rolling pin

  4. Add to roasting dish

  5. drizzle with olive oil

  6. sprinkle with salt and pepper

  7. mix all ingredients

  8. cook for 1 hour

  9. Take dish out of oven and put on hob on low heat.

  10. Use a masher to break up all the ingredients

  11. mix in the flour

  12. pour in 2 litres hot water and turn up heat

  13. boil 10 mins til thickened

  14. Turn down and simmer 25 mins stirring occasionally

  15. add sherry or port.

  16. Push though a sieve and allow to cool.

  17. Pop in freezer.

  18. When meat cooked take the fat off the top and add demi to the gravy and reheat.
