Chickpea flour gravy

Serves 3 people

Ingredients

  • 1/4c butter
  • 1 pack mushrooms sliced
  • 1/3c chickpea flour
  • 1c chicken or vegetable broth (plus more to thin, if needed)
  • herbs to taste (I like fresh or dried sage or oregano)
  • salt and pepper to taste

Directions

  1. melt 1/2 butter in saucepan over med/high heat

  2. add mushrooms and herbs if desired, cook til done – remove from pan

  3. add remaining butter

  4. stir in chickpea flour

  5. whisk in 1c cold broth – add more if needed

  6. simmer

  7. add cooked mushrooms

  8. simmer til desired consistency

  9. add salt and pepper to taste
