Salmon baked in foil with green beans and pesto

Ingredients

  • Two salmon fillets
  • Freshly ground pepper
  • Olive oil as needed
  • Two handfuls of green beans ( I use Trader Joe's Haricots Verts)
  • One lemon
  • Two heaping Tbs. green pesto ( I use Trader Joe's)

Directions

  1. Pre-heat oven to 400 degrees

  2. Halve the lemon

  3. Layer two sheets of aluminum foil and place a handful of beans in the middle.

  4. Lay a salmon fillet, skin side down,across the beans and spoon a heaping Tbs. of pesto on top. Drizzle with olive oil, squeeze the juice from one of the lemon halves over all, and season with pepper. Pull up edges of foil to make a parcel. Repeat these steps with the second salmon fillet and place both foil parcels onto a sheet pan.

  5. Put the sheet pan into the hot oven and cook the parcels for 15-18 min. Remove the pan from the oven and let stand for 1 minute before carefully unwrapping and checking to see if salmon is cooked through.
