White Peach Floats

Ingredients

  • 1/2 c splenda
  • 1 2 inch piece fresh ginger, chopped
  • 4 lb white peaches, chopped
  • juice of 1 lemon
  • 4 scoops cool whip lite

Directions

  1. Fill a bowl halfway with ice water.

  2. In saucepan over med heat, dissolve splenda in 2 cups water.

  3. Add ginger, boil 8-10 min.

  4. Add half the peaches, cook 2 min.

  5. Transfer to ice water for 1 min and slip off the skins.

  6. Repeat with other peaches.

  7. Pour syrup into bowl. Place peaches and lemon juice into bowl and mash with hands.

  8. Press into strainer to extract juice.

  9. Mix juice with syrup and refridgerate.

  10. Serve topped with cool whip.
