Red Rice Salad

Ingredients

  • 1 1/2c red rice
  • 2 1/2c water
  • 1 pkt feta cheese
  • 2 beetroot peeled and diced
  • Herbs - flat leaf parsley, basil, mint, coriander
  • 3 cloves garlic
  • 1 red capsicum cut into chunks
  • 1 red onion cut into chunks
  • 1/2c pine nuts, roasted
  • 1 lemon - juice

Directions

  1. Cook rice by absorption – rice & water in saucepan, bring to boil and simmer about 25 min

  2. roast beetroot til tender

  3. add onion about 1/2 way through

  4. roast pine nuts

  5. fry capsicum with 3 cloves of garlic

  6. Mix all ingredients together

  7. Just before serving, add feta, lemon & lots of herbs

  8. Season with lots of pepper & salt

  9. Variations:

  10. - carmelised onions cut in 1/2 rounds

  11. - blue cheese instead of feta

  12. - fried garlic mushrooms
