Vegetarian grain and dairy free lasagna

Ingredients

  • 1 can chopped tomatoes, 1 tbsp tomato paste, pinch sugar, herbs, pepper, chilli, 1/2 onion, 2 garlic cloves, 1 zucchini, 7 mushrooms, 1 eggplant, half bag spinach, 1 cup cashews, water, juice of half a lemon, 2 eggs 1 red pepper.

Directions

  1. ak cashews in water for 6 hours before draining. Make cashew cream by Blending cashews with water and lemon juice. Add eggs and blend till smooth. Make marinara. Grill veggies. Sauter mushrooms and spinach separately. To assemble: marinara, zucchini, mushrooms, marinara mixed with cashew cream, peppers, eggplant, spinach, cashew cream, marinara. Cover with foil and bake at 155 degrees for 1.5 hours.
