Lemon barley water

Ingredients

  • zest and juice of 2 unwaxed lemons, finely grated
  • 50g caster sugar
  • 125g pearl barley

Directions

  1. Mix the lemon zest and sugar in a large glass bowl. Rinse the barley and add to the bowl with 1.2 litres boiling water. Stir well and leave to cool.

  2. Add the lemon juice to the cooled mixture. Strain through a sieve and chill. Serve with lots of ice and strawberry cream cheese sandwiches.
