Russian Soup

Ingredients

  • Left over chicken or turkey
  • Onions
  • Celery
  • One carrot
  • Potatoes
  • Chicken bullion cubes

Directions

  2. Using the leftovers of Chicken or Turkey….cook the remants in a pot covered with water.

  3. Add a couple of chicken bullion cube to it. Boil it until all meat is falling off the bone. (about an hour) Then strain it all through a strainer into another large pot. Pick through all the bones and put them in a container and refrigerate. Let the pot with the broth sit overnight in the frig. The next day, skim off any fat and add the refrigerated meat to it. To this pot, add one entire bunch of celery, washed and cut in 2" pieces. Quarter one large onion (maybe two of them) and throw them in the pot. Add 10 to 14 pealed and quartered large potatoes. I will sometimes add ONE carrot cut in pieces. Cook it all until it’s mush. Let it cook and then put it through a blender to make it into a creamed soup. When you serve it….serve it with grated cheddar cheese. I either serve it with a salad or hot French bread. It is very filling so it’s a meal in itself.
