Chocolate and orange croissant bread and butter pudding

  • 50g butter, softened, plus extra for greasing
  • 4 croissants
  • 150g dark chocolate, broken up
  • 3 eggs
  • 50g golden caster sugar
  • 250ml milk
  • 250ml double cream
  • finely grated zest of 1 orange
  • 50g flaked almonds
  • 1 tbsp icing sugar

Directions

  1. Preheat the oven to 180˚C/fan 160˚C/gas 4. Lightly butter a medium-size baking dish. Slice the croissants in half horizontally and butter lightly on both sides. Lay the slices overlapping each other in the baking dish, tucking the chocolate pieces between them.

  2. Mix the eggs with the sugar, in a large bowl, then stir in the milk, cream and most of the orange zest. Pour over the croissants, then press down the croissants to submerge in the custard mixture. Bake for 25 minutes, until almost cooked.

  3. Rinse the almonds briefly under cold water, and while still wet, toss in the icing sugar. Sprinkle on top of the pudding, and cook for a further 10 minutes, until the almonds have crisped up and turned golden. Sprinkle with the remaining orange zest to serve.
